SLS Dubai, the iconic 75-storey hotel located in Downtown, has appointed a Bars Manager whose exceptional creativity and a wealth of knowledge is expected to elevate the hotel’s beverage offerings to new heights.

Boasting a decade of experience in luxury hospitality at award-winning venues, Francesco Immorlano’s international career has been marked by roles in Spain, and the UK, namely in London where he honed his skills as a bartender at Sexy Fish.

Taking a leap of faith, he then moved to the UAE, where he continued to shine in his role as senior bartender at ZUMA, before being promoted to bar supervisor in 2021.

Pairing his ever-growing skillset and creative flair, he then took the position of head bartender and assistant bar manager at Ergo Dubai.

Throughout his fruitful career, Immorlano has had the privilege of collaborating with some of the world’s most recognised industry professionals, and these experiences contributed to his growth both personally and professionally.

His journey has further been marked by experiences in venues listed among the World’s 50 Best Bars, including Zuma Dubai, which ranked 17th in 2022 and Ergo Dubai, earning the 69th place.

Now in his new role as SLS Bars Manager at SLS Dubai, Francesco brings a unique blend of creativity and expertise that will leave guests coming back for more.

His approach to menu creation is rooted in a three-step process: finding universally recognised flavour pairings; introducing an element of surprise; and ensuring the perfect balance for a palatable experience.

Among his memorable creations at SLS Dubai is the Bachue cocktail, a playful twist on a classic whisky highball that is softer on the palate and designed for non-whisky lovers. The drink is garnished with a “bitten” slice of melon, which has become a conversation starter, showcasing Francesco’s ability to create innovative and memorable beverages.

Looking ahead, Francesco is committed to creating a one-of-a-kind guest experience at SLS Dubai.
