Hilton Dubai Jumeirah appoints new head chef for Trader Vic's

DUBAI, May 10, 2018

Trader Vic’s at Hilton Dubai Jumeirah has welcomed Esteban Andrés Gómez Coronado as its new head chef.

With over eight years of culinary experience working as a head chef and executive chef in a number of prestigious establishments across Chile, US and UAE, Chef Coronado has a passion for hospitality and culinary services.

Born in Chile in 1989, it was here that his journey into the culinary world first started when he joined a culinary school at the age of 14. During his six year tenure, he developed skills that allowed him to work his way up to take on the role of chef de cuisine at Pea Restaurant located on Easter Island.

Coronado’s career to date has seen him work across a number of establishments, including Altiplanico and Hare Noi hotel where he held the position of executive chef, managing the culinary requirements for all restaurants within the resort. Here he was responsible for a team of 10 and became known for his culinary creativity and presentation skills. He also spent four months working at My Moon, a Spanish restaurant in Wilhemsburg, New York.

Moving to the UAE in August 2015, Coronado secured a role at the illustrious Table 9, Hilton Dubai Creek – an award-winning venue that earned a reputation for high-quality, original menus. Responsible for the whole operation and kitchen staff, Coronado developed new dishes and hosted a series of cooking classes to drive a new revenue stream into the business. After one year in service, he made an internal transfer within Hilton Dubai, moving to Pachanga, a restaurant that specialises in South American cuisine, before taking on the role as head chef at Trader Vic’s, Hilton Dubai Jumeirah. Pushing the boundaries of the brand, Esteban has collaboratively worked alongside the Trader Vic’s Worldwide team to develop a selection of dishes that are only available at the JBR location and continues to develop key management and culinary skills. - TradeArabia News Service
